I am working on a way to run Mac OS 7,8 or 9 applications on an Intel Mac. I have figured it out about half way and just need to install the OS 9 operating system. I am using a product called SheepShaver. It runs an emulator, kind of like a virtual machine, and it look very promising. Like I said, I am still in the "learning" stages of the process and have made a few tweaks and adjustments already using X11 Developer tools. I will post my findings, resources, opinions, and the steps I've used to bring back life to the classic applications. If you want to look at it yourself in the mean time check this site out.
